Spicy potato salad with microgreens

Recipe + ingredients

Ingredients

  • 2 kg red potatoes, cleaned and sliced
  • 4 tbsp rice vinegar
  • 2 tbsp balsamic vinegar
  • 6 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 small red onion, finely diced
  • 1/2 tsp. salt and 1/2 tsp. pepper
  • 3 pp. fresh parsley or tarragon
  • 1/4 cup capers
  • a handful of micro greens of your choice (we recommend – beets, amaranth, broccoli, arugula, radishes)

Preparation

  • Boil the potatoes and drain them.
  • Gently stir the warm potatoes
  • 3 pp. vinegar, salt and pepper. Cool for 20 minutes.
  • Whisk the remaining rice vinegar with the balsamic vinegar, olive oil, dijon, red onion, fresh herbs and capers.
  • Toss the cooled potatoes with the vinaigrette.
  • Top with microgreens and serve!
