Description
- 2 kg red potatoes, cleaned and sliced
- 4 tbsp rice vinegar
- 2 tbsp balsamic vinegar
- 6 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 small red onion, finely diced
- 1/2 tsp. salt and 1/2 tsp. pepper
- 3 pp. fresh parsley or tarragon
- 1/4 cup capers
- a handful of micro greens of your choice (we recommend – beets, amaranth, broccoli, arugula, radishes)
