Shakshuka with artichokes, kale, feta and micro greens

Ingredients

  • 2 pp. oil
  • 2 leek heads
  • 1/2 cup onion (diced)
  • 4 garlic cloves (finely chopped)
  • salt and pepper (to taste)
  • 1 tsp. red pepper
  • 1/2 tsp. cumin
  • 400 g artichokes (chopped)
  • 1/3 cup coriander (chopped)
  • 3 cups kale (chopped)
  • 4 eggs
  • 1/4 cup crumbled feta (for garnish)

Preparation

  • Sauté all the vegetables in the butter until soft and lightly golden.
  • Add all the spices.
  • Using a spoon, make 4 small “wells” in the mixture where you will break the eggs.
  • After adding the eggs, cover the pan with a lid and leave for another 5-10 minutes until the eggs are ready.
  • Finally, you add the crumbled feta and chop the micro greens you’ve chosen and serve!
