Pasta with lemon, parmesan and micro peas/rocket

Ingredients

  • 2 full cups microgreens peas or arugula
  • grated peel of 1 large lemon
  • 1/4 cup lemon juice
  • 1/3 cup olive oil
  • 1 cup grated Parmesan
  • salt and pepper
  • spaghetti
  • 1/2 cup of the water in which the spaghetti was cooked

Preparation

  • Cut the micro plants and set them aside for the moment.
  • In a bowl, mix the spices, parmesan, olive oil, lemon zest and juice.
  • Boil the spaghetti and reserve some of the water.
  • Put the spaghetti in the prepared mixture/sauce and add the micro greens.
  • Add more parmesan and serve!
